PURE WHITE MANZONI 500ml
The light drying on the vine before hand-harvesting, and the subsequent fermentation of the must in tonneaux, enhance the particular structure of Manzoni Bianco. But only the weather patterns of certain vintages make it possible to obtain this very special wine.
VITICULTURE
Tufa soil of volcanic origin
Altitude: 250 m above sea level.
Exposure: south - west
Type of farming: Guyot
Density: 5,000 plants/hectare
Fertilisation: Winter green manure with field beans
Treatments: copper, sulphur (three to six treatments depending on the season)
Yield / Hectare: 45 q
Yield / Grape stump: less than one kg.
HARVEST
10 October, grapes with slight raisining, harvested by hand
VINIFICATION
Light crushing of destemmed grapes, pressing with low-pressure membrane press, clarification of must by sedimentation for 10 hours. Must yield about 40% of grapes. Fermentation in tonneaux with selected yeasts certified No GMO.
MATURATION
10 months in tonneaux
AGING
in 0.50 l bottle.
