We cultivate our vineyards using organic methods, preferring manual work and reducing mechanized interventions to a minimum; we pay particular attention to increasing biodiversity thanks to the care of border hedges and buffer strips, the positioning of artificial nests and the sowing of green manure mixtures which favor, in addition to a natural process of fertilization not of the plant but of the soil, the settlement of beneficial insects and the proliferation of microbial life in the soil itself thanks to the formation of humus.

 

The vinification in amphora is for us the most precious part of our production process. The choice was certainly not random but well studied and considered. First of all, we chose Terracotta amphorae from Impruneta, a Tuscan municipality with production of renowned Italian quality. These amphorae are used during the alcoholic fermentation phase since, being porous, they push the gases outwards while maintaining a lower temperature than the vinification in steel, developing the finesse and delicacy of the wine more slowly, managing to maintain each perfume.
